Delicious puff pastry turnovers filled with sweet blueberry pie filling and drizzled with a powdered sugar lemon on top.

Flakey pastry, rich blueberry filling, tart lemon drizzle, these are Easy Blueberry Lemon Turnovers! These things are TO DIE FOR!! Seriously… They are so addictive they should be illegal… But they’re not so might as well give in!

These easy blueberry lemon turnovers are just how they sound, EASY!

I know that many people steer clear from baking because baking can be hard to someone who doesn’t know what they are doing. This is the perfect recipe to try if you’re a newbie baker.

I’m not going to lie and say I am this super experienced baker because I’m not!

I want to become a better baker so I am trying new things and having fun with it. I hope that you can too!

I used puff pastry for this recipe instead of making my own pastry dough. Homemade is always great but I have a crawling baby roaming the house getting into things so most of the time I don’t have the time to bake from scratch. Puff pastry is easy and PERFECT for this recipe. I actually tried using another store bought dough for this recipe and it had no match to the puff pastry. Definitely glad with the choice I made!

The filling is even easier, blueberry pie filling! I picked up a can from the store, it was that easy. It blends so well with the puff pastry and the lemon drizzle just ties it all together.

What’s funny is that my mom doesn’t like puff pastry and once I made these and asked her to try one, she loved it! I’ve converted her lol

Pastry turnovers with blueberry lemon filling

Easy Blueberry Lemon Turnovers

Prep: 10 mins Total time: 35 mins

Ingredients:

  • 1 box of frozen puff pastry
  • 1 can of blueberry pie filling
  • 1 egg  white
  • 2 Tbsp water
  • 1 cup powdered sugar
  • 2 Tbsp fresh lemon juice

Instructions:

  1. Thaw puff pastry as instructed on box
  2. Heat oven to 375
  3. Spray cooking spray on baking sheet
  4. Once thawed, roll out puff pastry and cut each sheet into 4 square pieces
  5. Beat egg white and water until combined
  6. Scoop about a tablespoon full of blueberry pie filling into the middle of each square
  7. Make sure not to put too much because you won’t be able to seal the turnovers
  8. Once all have pie filling, brush egg white mixture along the edges of square and fold the diagonal corner together to seal
  9. Press the seal down lightly
  10. Bake for 20-25 minutes until the crust is lightly browned on the top
  11. Take them out to cool

Lemon Drizzle:

  1. Mix powdered sugar and lemon juice together until smooth
  2. Once the turnovers have cooled take a spoon and drizzle the mixture back and forth over the turnovers

Serve immediately or place in a airtight bag for breakfast the next morning! I hope you enjoy them as much as I did!

Chocolate Dessert Skewers

Sweet strawberries, fresh bananas, moist angel food cake laced with a melted chocolate drizzle. These are Chocolate Dessert Skewers!

This Easter my mom served up some sliced strawberries on angel food cake and whipped cream. Yummy!! Who doesn’t LOVE that? Now, I’m not hating on it but… I wanted to spice things up a bit and add some chocolate to the mix!

My goal was to try and combine what my mom made and chocolate fondue…

Somehow… And this is what I came up with! Chocolate Dessert Skewers. A SUPER EASY dessert that your family will LOVE.

NO MESS, just eat off the skewers! This recipe is perfect for an outdoor BBQ or picnic with the family.

You can make these ahead of time and put them in the fridge until you want to enjoy them. Don’t keep them refrigerated for too long because the cake will start to harden.

Let’s get into the recipe!

Chocolate Dessert Skewers

Ingredients:

  • 1 small loaf of angel food cake
  • 1 small bunch of bananas
  • 1 package of strawberries
  • 1 12 oz. bag of chocolate chips
  • 1 package of bamboo skewers
  • 2 tsp coconut oil
  • 1 Tbsp lemon juice

I usually cut the recipe in half for 3 people

Instructions:

  1. Cut tops off of strawberries
  2. Cut angel food cake into 1 inch cubes
  3. Peel and slice bananas into 1 inch pieces
  4. Brush bananas with lemon juice (to prevent browning)
  5. Place angel food cake, strawberry, and banana on skewers – repeat until it fills the skewer
  6. Once you have all of your skewers done, combine 1 cup (half the bag) of chocolate chips and 1 tsp. of coconut oil in a microwave safe bowl
    (I melt chocolate 1 cup at a time to prevent it from cooling/hardening too quickly)
  7. Microwave for 30 second intervals until melted – stirring in between intervals
  8. Drizzle chocolate with a fork over each skewer with a back and forth motion

They don’t need to look perfect! I don’t have time for perfect #momlife lol

And you’re done! You can enjoy right away or wait a few minutes for the chocolate to harden. I did NOT wait. They looked way too good!! I hope you enjoy them as much as I did!

Pink Lemonade Bars

Gooey lemon filling, dustings of powdered sugar, buttery flakey crust, fresh strawberries, is your mouth watering yet? Mine sure is!! This my friends is a Pink Lemonade Bar.

My mom has a lemon tree that produces TONS of lemons every year. The tree has grown so large that it almost reaches the roof of their two story house! Lucky for me I get to take home a bunch of these luscious lemons.

My mom sent me home with a large bag full of lemons so I needed to get creative and find a recipe for these babies. Lemonade is good but I always end up making it and I wanted to try making something new and yummy. The result..Pink Lemonade Bars! This is actually my first time making any sort of lemon bars and they turned out amazing!

These are super lemony and sweet.

They would be a perfect treat for Mother’s Day which is coming up. You could “accidentally” email this recipe to your spouse lol!

This recipe is a twist on classic lemon squares. I wanted to JAZZ them up a bit and have some fun with them. There are other recipes that replace the red food coloring with raspberries but I was feeling lazy so food coloring it is! And as you can see from the photos I really CAKED the powdered sugar on but you can always just do a light dusting. I just really LOVE powdered sugar! Here is the recipe.

Pink Lemonade Bars

Total Time – 60 Mins

Ingredients:

  • 1 cup flour
  • 1 cup granulated sugar
  • 1/4 cup powdered sugar + more for sprinkling
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 pinch of cinnamon
  • 1/2 cup room temperature butter
  • 2 eggs
  • Juice from 2 lemons – Zest from 1 of the lemons
  • 4 drops red food coloring
  • Strawberries for garnish
  • 8x8x2 pan

Instructions:

  1. Set oven to 350f
  2. Mix the flour, powdered sugar, butter, and cinnamon until crumbly.
  3. Press the mixture into ungreased pan and bake for 20 mins
  4. Whisk with electric mixer granulated sugar, baking powder, salt, eggs, lemon juice, lemon zest, and food coloring for a few minutes until frothy
  5. Immediately pour over the baked crust
  6. Bake for 25 to 30 minutes
  7. (I baked mine for about 30 and the edges got a little too done so check it at 25 minutes)
  8. Let it cool then sprinkle powdered sugar all over that baby
  9. Add some sliced strawberries to top off that beautiful Pink Lemonade Bar
